The Zerega process begins and ends with attention to detail. All of our products are made using the finest ingredients and to exacting standards. While we use state-of-the-art pasta lines, we don’t solely rely on our machines.

After all, pasta making is an

art and a science.

We continuously monitor and adjust the pasta mixers, extruders, and dryers to optimize the process for the product. The result? Pasta that withstands the rigors of foodservice preparation and maintains optimal shape, texture, and flavor.

Our Process Sets Us Apart

We start with the finest ingredients. Durum wheat is milled to produce the golden semolina, whole wheat flour and durum flour used in all of our pasta. Our noodles are made with egg yolks and our vegetable pasta is made with natural spinach and tomato.

  • Shape

    Most pasta shapes are formed by pushing freshly mixed dough through forming dies and cutting it to size. Openings on dies can be Teflon-coated to make pasta with a bright, shiny appearance, or bronze to create a more traditional "artisanal" appearance.

  • Long Pasta

    Long pasta, like spaghetti and fettuccine, are made by hanging the extruded pasta strands on rods which are conveyed through the dryer. Short pasta shapes, like elbows and penne, are placed on screens which are conveyed through the dryer. Specialty shapes such as bow ties, farfalle, and orecchiette are made by stamping the shapes out of a sheet of dough.

  • drying

    Proper drying is critical in the pasta-making process. Pasta is dried slowly as it travels through a continuous drying chamber for 3 to 10 hours, depending on the pasta shape. Exact control is maintained over temperature, humidity, and air flow, and each shape is dried according to very specific parameters.
